Corn Chowder
6-8 Servings

1 Tbsp. butter
3 slices Canadian bacon, minced
1 large onion, chopped
1 red pepper, small diced
4 Yukon Gold potatoes, cubed
1 (46oz.) can chicken broth
2 cups water
2 cups cream
3 cups frozen corn
1 Tbsp. salt
fresh ground pepper
cayenne to taste |

| Melt butter in
a large pot over medium heat and then add the bacon. Stir until
wilted but not brown and add the onion and red pepper. Stir until
wilted and then add the potatoes, chicken broth and water. Simmer
for 15 minutes until potatoes are just tender. Add the cream, corn,
salt and pepper...taste to adjust seasoning and add cayenne. Taste
again. Simmer for 8-10 minutes more to cook the corn. |
